The appropriate time for kimchi this year is a little later than usual in the central region, but it is expected to be faster in the south.
Private weather forecaster Kweather said the best time to make kimchi this year is likely to be late November and early December in the central part of the country, one to two days later than usual.
On the other hand, the southern and eastern coasts are expected to be from early to mid-December, one to three days earlier than usual, and the southern coast from late December to early early December, it added.
Seoul is expected to be Dec. 1, Daejeon Dec. 2, Daegu Dec. 6, and Gwangju Dec. 8, two days later than usual.
Kweather explained that the average daily temperature is below 4 degrees Celsius and the daily minimum temperature is kept below 0 degrees Celsius, but recently, as temperatures rise due to climate change, the time to make kimchi is generally delayed.
