White steaming.

This is the first process of making makgeolli, a rice-steaming process to make kodubap.

[Jeong Eui-hyun / Traditional handmade makgeolli young farmer: (How much do you steam?) Usually, it steams for about 55 minutes after the steam passes through. (So it becomes hot pot rice?) Yes. That's right.]

Jjin rice, that is, after a certain period of fermentation and maturation by mixing rice, yeast, and water, it becomes makgeolli.

Young farmers' traditional handmade makgeolli has a fairly long fermentation and maturation period. It takes about two months. It is at least four times more than regular makgeolli.

It is to create a so-called deep taste without adding artificial sweeteners such as aspartame at all, and it goes through a soaking process four times.

[Jeong Eui-hyun / Traditional handmade makgeolli young farmer: Since we don't use sweeteners, we ferment four times to bring out the taste and bring it to a stable state. (That's why it's called a rice wine?) Yes, that's why it's a no-brainer.]

Jeong Eui-hyun, who has been on a one-way brewing road for more than 10 years since the age of 24 due to the charm of traditional liquor.

As they insist on tradition, they do not use Japanese-style improved yeast, but of course, they only use traditional yeast.

In addition, only Samgwang rice and glutinous rice produced in Gapyeong, Gyeonggi-do are used as raw materials.

[Kim Tae-geun / Rural Development Administration Young Farmers: We are making traditional makgeolli using agricultural products from Gapyeong, and we are developing new products to suit consumers' tastes these days.... Currently, it is receiving great response as a local specialty.

Traditional handmade makgeolli by young farmers, which is going viral as traditional makgeolli for the older generation and so-called "hip makgeolli" for the younger generation.

He also won the grand prize in the table wine category at last year's Sul Festa in Gyeonggi Province.
